Ingredients
- 8 eggs
- 1/2 sweet onion, chopped
- 1 jalapeño, chopped
- 1/2 cup kalamata olives, chopped
- 1/2 cup cheddar cheese (to mix in)
- 1/2 cup cheddar cheese (to top the mixture)
- 1 tbsp butter
- Salt and black pepper, to taste
Preparation
- Preheat oven to 375°F (190°C).
- Grease a medium baking dish or oven-safe skillet with butter.
- In a large bowl, whisk the eggs until smooth. Season with salt and black pepper.
- Stir in onion, jalapeño, olives, and 1/2 cup cheddar cheese.
- Pour the egg mixture into the prepared dish.
- Bake for 10 minutes, then carefully remove from the oven and sprinkle the remaining 1/2 cup of cheddar cheese evenly on top.
- Return to the oven and bake for another 15–20 minutes, or until the eggs are fully set and the cheese is golden and bubbly.
- Let cool slightly before slicing and serving.
